Get ready for this fantastic recipe. I discovered this cake last weekend at my friend’s wedding party. Everything that was served they had baked and cooked themselves which made the whole wedding occasion much more unusual and unique. Amongst all the tasty treats there was this heavenly cake. I had one slice and I couldn’t resist another one.
After the party I immediately asked for the recipe. The cake was in fact made by bride’s mother. Bride commented that I wasn’t the only one who was asking the recipe -I wasn’t surprised, it was that good!
When I got the recipe my first thought was ’oh no, how can I find any ”piimä (soured milk) in the UK’. This is the problem I have noted previously in my blog. As we Finns love our milk products, quark, viili, piimä (soured milk) and so on, we use them in all sort of baking but forget it makes almost impossible to prepare these treats anywhere else in the world! I, however, made some investigation and found out that ’buttermilk’ that is sold in the UK is a soured milk that is a similar side product as Finnish ’piimä’,
Last night I baked this cake and have to say, it is mouthwatering! So here is the recipe for you:
8dl plain flour
4 dl sugar
2 tsp bicarbonate (baking)soda
2 tsp baking powder
250 g butter
1. Mix these well so that it becomes crumble and use half of it as a base for the cake.
2 dl ’piimää’ i.e. soured milk, in the UK buttermilk works as an equivalent
Spread over the base.
lemon juice of 1-2 lemons + grated zest of one
2 pots of quark (2x 200g)
2 dl sugar
2 tsp vanilla sugar
Spread this part 3 on the top of the part 2. On the top of this spread the rest of the crumble (part 1)
Bake in the oven in 200 celsius degrees for 30min.
