ANZAC biscuits -flavour of Australia

anzacMy husband’s Australian cousin was staying with us and she surprised me by baking lovely Anzac biscuits. The biscuits are simple but due to this simplicity there are bad and good recipes out there. This one that is actually taken from the BBC website is fantastic. I wanted to share it with you as it is worth trying. The biscuits come quickly and they are just heavenly! I have stuffed myself full of these lovely oat biscuits ever since. What is even better, I have heard that oat is increasing milk supply and it is good for breastfeeding…so another good excuse to keep on eating them 🙂 I think I have posted one other Anzac recipe before but this one is the winner! Extra golden syrop is the key!

  • 2dl porridge oats
  • 2dl desiccated coconut
  • 1 3/4dl  plain flour
  • 1dl caster sugar
  • 100g butter , plus extra butter for greasing
  • 2 tbsp golden syrup
  • 1 tsp bicarbonate of soda
  1. Heat oven to 180 celsius degrees. Mix oats, coconut, flour and sugar in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the golden syrup and butter mixture.
  2. Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
  3.  Bake in batches for 8-10 mins until golden.  THE SECRET IS When taken away from the oven pour golden syrop on the top of the each biscuit to add the flavour!!
